- Small producer organizations: En la Sierra and Altos de Chiapas, various organizations of coffee producers have faced challenges on their path to success. Despite difficulties such as changing demand and lack of access to favorable marketing channels, they have made significant progress. The project of United Nations Development Program (UNDP) has provided support to organizations such as Lekil-Kuxlejal SC de RL de CV, Batsil Winik (Kulaktik) / People's Democratic Union AC, Experimentation Center for Community Development Tzeltal, AC (CEDECOT) and Sustainable Development of the Grijalva Basin SPR de RL to strengthen your production processes3.
- Average plot size: Coffee producers in Chiapas own plots or smallholdings of 1.5 to 5 hectares3.
- Postharvest specialization: The project has focused on specializing the post-harvest product, either by conditioning the grain in parchment or processing it through roasting and grinding. Organizations like Batsil Winik have increased their production of roasted and ground coffee, going from 120 kg in 2019 to 900 kg in 20223.
